I’ve escaped the cold for a few days and am soaking up the sun in Florida while visiting family (hi, Mark!). It’s been a wonderful trip so far—beautiful scenery, delicious meals, and all the warm-weather activities I’ve been missing (tennis! hiking! birdwatching! late-night ice cream!).
If I were back in Boston, though, I’d probably be cozied up on the couch with a heated blanket, a good pot of tea1, and the next episode of Severance.
For dinner, I’d be enjoying these vegetarian bean and cheese tacos packed with homemade refried beans, pepper jack cheese, and a spicy Chipotle sauce. They’re quick, easy, and satisfying.
