For those of you who have been patiently abstaining from bread this last week, might I suggest two delicious, carb-fueled recipes to try this weekend?
First on deck, we’ve got a *very* quick weeknight dinner featuring vegetarian smash burgers. They’re a great back-pocket recipe when you’re out of ideas or craving a fast food-esque meal.
The second recipe is hand-rolled pici pasta. Pici are a great beginner pasta project because they require no special equipment. They’re thick, chewy, slurpable noodles, like thick spaghetti, hailing from Tuscany. I love serving them with a hearty ragu or a simple garlicky tomato sauce.
Weeknight Dinner: Impossible Smash Burgers
These vegetarian smash burgers are a delicious take on the classic, starring crispy smashed Impossible meat patties, griddled onions, and all the fixings.
These smash burgers are a hit in my household! They’re an easy 30-minute meal with lots of good flavors to satisfy your craving. Smashing the patties with a heavy cast-iron grill press or metal spatula creates a heavenly texture with a thin, crispy, and caramelized exterior.

Weekend Project: Handmade Pici Pasta
Pici are rustic, hand-rolled Tuscan pasta with the texture of thick spaghetti. Best of all? They require just a few ingredients and no special equipment!
Pici (or pinci), is a type of hand-rolled pasta originating in Siena, Tuscany. Pici look like thick spaghetti, typically about the thickness of a pencil, often with varying lengths (emphasizing their rustic, imperfect nature).
Usually, the dough is made with flour, water, and olive oil, though some modern versions include eggs. To make pici, roll out a section of the dough into a thin sheet, then cut the sheet into strips. Next, roll each strip into a spaghetti-shaped strand and repeat.
Cook them in boiling water for a few minutes, then serve with your favorite sauce.
