Hi friends,
With Memorial Day around the corner and the days getting longer and warmer, it’s the perfect time to ease into summer gatherings. These bright, make-ahead dishes are perfect for potlucks, picnics, or a lazy evening on the porch.
Enjoy!
Snacks & Appetizers
Burrata Bruschetta: Sweet cherry tomatoes are quickly marinated with fresh basil and garlic, then spooned over thick slices of crunchy, rustic bread and topped with creamy burrata cheese.
Whipped Ricotta: Blend some ricotta, a touch of heavy cream, and a drizzle of olive oil in a food processor until smooth and creamy. Seriously, it's that simple! It's a great dip to enjoy alongside seeded crackers or to spread on toast.
Sour Cream Dip with Spicy Tadka: Classic sour cream dip gets a makeover with a topping of sizzled spices. This addictive dip features a homemade sour cream and onion base and a spicy tadka swirl made from garlic, cumin, and chili powder.
Spicy Watermelon and Charred Corn Salad: This salad features watermelon, charred corn, lime, chili powder, crushed corn nuts, and lots of herbs. It comes together rather quickly and is a fun, flavorful addition to a Memorial Day menu.
Connecticut Lobster Rolls: This is my all-time favorite Connecticut lobster roll recipe, featuring tender pieces of lobster tossed in brown butter, lemon zest, and chives piled high in toasted brioche buns.
Mains
Impossible Smash Burgers: These vegetarian smash burgers are a delicious take on the classic, starring crispy smashed Impossible meat patties and all the fixings.
Whole Roasted Branzino: This whole roasted branzino is stuffed with sliced lemon and brushed with a brown butter Calabrian chili crisp that's utterly addicting. It's baked until the skin is golden brown and the fish is moist and tender, and served with fresh lemon juice.
Pizza: Fire up your outdoor oven and start with my favorite beginner friendly pizza dough—or, for the best texture, try the 72 hour version if you’re up for a bit more of a challenge.
Desserts
Blueberry Clafoutis: This blueberry clafoutis is thick, custardy, and filled with lots of juicy blueberries. It’s an easy and flavorful dessert with a flan-like texture – sure to be a crowd-pleaser! I have a peach variation, too!
Homemade Oreo Ice Cream: You've never had Oreo ice cream quite like this before. This is the best homemade Oreo cookie ice cream! Thanks to the genius of Stella Parks, the recipe features crushed Oreo cookies steeped in a custard batter, then churned in an ice cream maker with even more cookie pieces.
Shrikhand: This shrikhand recipe is a refreshing, creamy Indian dessert made with strained yogurt, saffron, cardamom, and sugar.
That’s all for this week! Hope you all have a great weekend.
